Fish curry

I'm pretty knackered after a weekend away working. So, this happened.

Rice cooked in the rice cooker with salt and black onion seeds.

Curry: can of coconut milk, drained/rinsed can of green lentils, turmeric, cumin seed, garam masala, salt, frozen mixed veg (tiny carrots, peas and broccoli), and some frozen basa fillets. Simmered until all cooked and tasty.

Crunchy topping: chopped onion, cumin seeds, mustard seeds, black onion seeds and desiccated coconut all browned with salt in coconut oil until toasty.

A very satisfying lunch and enough leftovers for two more meals with no chopping and minimal cleanup. I'll take that.

Zzzz

I've been struggling lately with my sleep. My GP prescribed venlafaxine for anxiety/panic attacks and it's working well for those but my sleep, although still of the required duration, has been much more restless and full of vivid dreams. Last night one of my dreams started out 'live action' but turned into anime halfway through which was pretty cool.

Today, despite my fitbit telling me I didn't sleep well, I feel ok. It's my mid-week rest day from work and I think I'm going to have a slow amble up the road for a chai latte and gluten-free pasty for lunch (don't tell anyone, but I haven't showered today yet as I need to wash my hair this evening...).  I might do some reading in the sunshine and pick up a few groceries. I had been feeling like a cold was coming on and although there are still niggles, the symptoms are greatly reduced. It's beautiful and sunny out and I may even take some photos if the muse strikes (crappy ones on my iPhone 4, but I like them).

Hoping I might even manage a nap this afternoon. I struggle with naps at the best of times but especially when anxiety is a problem. I tend to lurch wide awake in a panic about a millisecond before dropping off to sleep. But today I feel like it might be a thing that happens. :) I was up a little too late last night playing Diablo 3.

Pesto veggie rice with meatballs

Really exhausted today. I haven't been sleeping properly. So I'm pretty pleased that I managed to cook this level of food tonight. Now if only my house elf would do the washing up...

So... I found some gluten free beef/pork meatballs - they do have chilli in them and I haven't been eating nightshades but today I was too tired to care. I hope I don't suffer for this. I chucked them in the oven, put some rice into my automatic rice cooker, and while those cooked I made:

Pesto Veggie Rice

Fry frozen diced onion and garlic until softened. Add thickly sliced courgette and wedges of mushroom, and salt to taste. Fry until vegetables are cooked. Meanwhile, defrost chopped or leaf spinach (chop if leaf). Add to frying pan with some jarred marinated artichoke pieces. Cook until spinach and artichokes are heated through. Tip over some cooked rice. Add dollops of pesto, a drizzle of olive oil and some black pepper. Combine thoroughly.

Serve rice with parmesan (pre-grated today) on top and the meatballs on the side. All done in about 20 minutes, minimal chopping and washing up. I made enough to have leftovers for tomorrow and maybe the next day. Hurrah.

prawnlolly lives

They say you should start things as you mean to go on. I'm starting this blog on a Sunday morning when I'm so tired that I don't even know whether I hurt or not, so that seems fitting. I have ME/CFS, work part time, and am in the process of divorcing from my husband (who was my principle carer for a number of years). I'm currently living in a flat up two flights of stairs with no door intercom or washing machine while we sell our home.

I expect this blog will contain ramblings, cooking triumphs (I'm learning how to cook Actual Meals entirely with things from the freezer even when I have no energy), whinges/outpourings and other stuff as yet unforeseen.

(why prawnlolly? it's a long story)
